Ingredients
  

Salad
  • 6-8 cups chopped romaine lettuce, (or any crisp lettuce)
  • 1 cup cherry tomatoes, sliced or halved
  • 1 English cucumber, or regular cucumber, (cut into small pieces)
  • ½ red onion, thinly sliced
  • ½ cup Kalamata olives, (you can keep them whole or sliced them if desired)
  • ½ cup sliced banana peppers, (or green bell peppers)
  • ½ cup crumbled feta cheese
Homemade Greek Dressing
  • ¾ cup olive oil
  • 2 teaspoons garlic powder
  • 2 teaspoons dried oregano
  • 2 teaspoons dried basil
  • teaspoons ground black pepper
  • teaspoons salt
  • teaspoons onion powder
  • teaspoons Dijon style mustard
  • cup red wine vinegar
  • 2 Tablespoons fresh lemon juice

Method
 

  1. In a large bowl, mix together chopped lettuce, tomatoes, onions, kalamata olives, banana peppers, and cucumbers. Top salad with feta cheese.
  2. Combine all simple dressing ingredients in a jar or airtight container and shake until dressing ingredients are combined.
  3. Add dressing to salad right before serving.
