- 3 pounds boneless pork sirloin roast
- 5 cans diced green chiles 4 ounces each; 20 ounces total
- 1 packet taco seasoning
- 3 teaspoons ground cumin
- 12 flour tortillas, or corn tortillas
- favorite taco toppings shredded lettuce, cotija cheese, pico de gallo, guacamole, salsa, red onion, cilantro, shredded cheese, etc
Spray slow cooker with non-stick cooking spray.
Place roast in the bottom of the slow cooker.
In a mixing bowl, mix together chilies, taco seasoning, and cumin. Spoon green chile mixture over pork.
Place lid on the slow cooker and cook on LOW heat for 8-10 hours.
When pork is done cooking, shred or slice roast (it should fall apart pretty easily) and serve on top of tortillas with your favorite toppings.
