Ingredients
  

Salad
  • 1 bag spring mix lettuce (about 6 cups)
  • 2 mangoes peeled and cubed
  • 1 cup fresh blueberries
  • 2 cups fresh strawberries sliced
  • ½ cup sliced almonds (I used the candied salad-topper almonds)
Dressing
  • 8 ounces vanilla greek yogurt (you could use regular yogurt, too)
  • 1 Tablespoon lemon juice
  • 1 mango peeled and cubed
  • 1 teaspoon honey
  • 1 pinch salt

Method
 

  1. In a large bowl, toss the spring mix, mangoes, blueberries, and strawberries together.
  2. Top with sliced almonds.
  3. In a blender (or food processor) mix together yogurt, lemon juice, mango, honey and salt.
  4. Blend until smooth, then pour over salad (or serve on the side).
