Ingredients
  

  • 1 Tablespoon olive oil
  • 4 boneless, skinless chicken breasts
  • 1 cup low sodium chicken broth
  • 4 medium potatoes, cut in half
  • ½ teaspoon salt
  • 2 Tablespoons basil pesto
  • ¼ cup shredded Parmesan cheese

Method
 

  1. Push the saute button on the Instant Pot. When the Instant Pot says "hot", add the oil.
  2. Place the chicken breasts in the Instant Pot and sear, about 3 minutes each side, until it releases easily from the pan.
  3. Add chicken broth and potatoes to Instant Pot and sprinkle with salt (if desired).
  4. Put the lid on, turn valve to sealing, and select Manual or Pressure Cook for 7 minutes. The Instant Pot will take about 10 minutes to build pressure and begin counting down.
  5. Once the cook time is done, let the pressure release naturally for 5 minutes and then open the valve to venting.
  6. Stir in pesto and Parmesan and stir to coat. Serve with a side salad.
