Ingredients
  

  • 2 pound pork shoulder, or butt roast, fat trimmed
  • 1 Tablespoon sea salt
  • 1 Tablespoon liquid smoke flavoring
  • Tablespoons olive oil
  • 3 cups rice, brown or white, cooked
  • 1 cup green bell pepper, chopped optional
  • 2 tomatoes, diced optional
  • ½ onion, diced optional
  • ½ cup banana peppers optional
  • 1 cucumber, diced optional
  • 1 (2.5 ounce) can sliced olives optional
  • teriyaki sauce optional

Method
 

  1. Pierce pork all over with a carving fork.
  2. Rub salt and liquid smoke over meat.
  3. Set your instant pot to "saute" and add olive oil to the bottom.
  4. Once it's heated up, saute pork roast on all sides for 2-3 minutes or until browned.
  5. Remove pork from the instant pot and set aside.
  6. Place trivet into the bottom of the instant pot and pour 1 cup of water into the bottom of your pot.
  7. Place your pork on the trivet, seal your lid, and set your pressure cook or manual button to 30 minutes.
  8. After 30 minutes, let the steam naturally release for 10 minutes before doing a quick release.
  9. Remove meat from slow cooker and shred with 2 forks, adding drippings as needed to moisten.
  10. Serve over rice, topped with your favorite veggies and teriyaki sauce.
