Homemade Cranberry Sauce

Ingredients
  

  • 16 ounces fresh cranberries
  • 1 cup 100% orange juice
  • 1/2 cup sugar
  • 1 teaspoon cinnamon
  • zest from 1 orange
  • 2 Tablespoons pure maple syrup

Method
 

  1. Add all the ingredients to the inside of the Instant Pot and mix together.
  2. Place the lid on top and lock into place. Turn the valve to SEALING. Select MANUAL (or Pressure Cook). Set the time for 7 minutes.
  3. When cooking ends, do a NATURAL RELEASE of the pressure (will take 10-15 minutes).
  4. Remove the lid.
  5. Spoon the sauce into a bowl and chill until ready to serve. The sauce will continue to thicken up as it cools.
  6. In a saucepan over medium heat, combine sugar and orange juice and whisk together until sugar is dissolved.
  7. Stir in cranberries and cook for about 10 minutes, or until they begin to pop.
  8. Remove from heat and transfer to a bowl. Sauce will thicken as it cools.
