Method
- Rinse and drain the black beans and place in a large mixing bowl.
- Add in diced tomatoes, diced onion, cilantro, minced garlic, and lime juice. Mix together well.
- Add in optional add-ins if desired – corn and diced jalapeno pepper.
- Gently fold in the prepared guacamole.
- Refrigerate for 2 hours. Mixing it up a few hours before serving allows the flavors to really blend for a flavorful guacamole.
