- 1/4 cup black beans
- 1 Roma Tomato, diced
- 1/8 cup Red Onion, diced
- 1/2 cup cilantro, chopped
- 1 teaspoon garlic, minced
- 1 teaspoon lime juice, fresh
- 1/4 cup canned corn optional
- 1 jalapeno pepper optional
- 16 ounces guacamole, prepared
Rinse and drain the black beans and place in a large mixing bowl.
Add in diced tomatoes, diced onion, cilantro, minced garlic, and lime juice. Mix together well.
Add in optional add-ins if desired – corn and diced jalapeno pepper.
Gently fold in the prepared guacamole.
Refrigerate for 2 hours. Mixing it up a few hours before serving allows the flavors to really blend for a flavorful guacamole.
