Ingredients
  

  • 1/4 cup black beans
  • 1 Roma Tomato, diced
  • 1/8 cup Red Onion, diced
  • 1/2 cup cilantro, chopped
  • 1 teaspoon garlic, minced
  • 1 teaspoon lime juice, fresh
  • 1/4 cup canned corn optional
  • 1 jalapeno pepper optional
  • 16 ounces guacamole, prepared

Instructions
 

  • Rinse and drain the black beans and place in a large mixing bowl.
  • Add in diced tomatoes, diced onion, cilantro, minced garlic, and lime juice. Mix together well.
  • Add in optional add-ins if desired – corn and diced jalapeno pepper.
  • Gently fold in the prepared guacamole.
  • Refrigerate for 2 hours. Mixing it up a few hours before serving allows the flavors to really blend for a flavorful guacamole.
