- Pat the salmon cubes dry with a paper towel. In a medium bowl, toss the salmon cubes with olive oil. In a separate small bowl, whisk together the cornstarch, paprika, garlic powder, salt, and pepper. Sprinkle the seasoning mixture over the salmon and toss gently until each piece is evenly coated.
- Air Fryer Method: Place the salmon bites in a single layer in the air fryer basket. Do not overcrowd. Air fry at 400°F (200°C) for 8-10 minutes, flipping halfway through, until cooked through and crispy.
- Oven Method: Preheat oven to 425°F (220°C). Arrange the salmon bites on a baking sheet lined with parchment paper. Bake for 10-12 minutes, until golden brown and cooked through.
- While the salmon is cooking, prepare the sauce. In a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, and honey until smooth. Add lime juice if using.
- Once cooked, let the salmon cool for a minute. In a large bowl, gently toss the crispy salmon bites with the bang bang sauce until well-coated. Serve immediately.

Notes
