Method
- In a food processor, grind cookies into crumbs.
- In a bowl, fold together crumbs and one package of cream cheese, until well incorporated.
- Form into 1″ balls and place on parchment paper lined baking sheet.
- Freeze for 15-20 minutes or until firm.
- In a microwave safe bowl, melt chocolate chips and coconut oil in 15 second increments, stirring each time.
- Dip cookie balls into chocolate and place back on baking sheet.
- Refrigerate (or freeze) until chocolate is firm.
