Ingredients
  

  • 4 tilapia fillets
  • 1 cup crushed tortilla chips
  • 2 Tablespoons chipotle pepper in adobe sauce
  • ½ cup chunky salsa
  • 1 Tablespoon lime juice
  • 1 lime, sliced for garnish
  • 1 bunch cilantro, for garnish

Method
 

  1. Preheat oven to 425 degrees.
  2. In a food processor or blender, blend chipotle peppers, salsa, and lime juice. Place in a shallow bowl.
  3. Place crushed tortilla chips in a separate shallow bowl.
  4. Dredge tilapia through the chipotle mixture and then through the tortilla chips. Place the fillets in a greased 9 x 13 inch baking dish.
  5. Bake for about 20 minutes, until the fillets easily flake with a fork and the edges are browning.
  6. Garnish with limes and cilantro before serving.
